8 slices of Italian bread, 3 tbsp extravirgin olive oil (plus a little extra for drinling), 2 cloves garlic (peeled halved), 5 tomatoes, 1 red onion (finely chopped), 2 tbsp basil (chopped),salt Pepper
1. Place the slices of bread on a grill plate and brush with extra virgin

olive oil. Grill until browned and then turnover, brushing this side with olive oil and browning.

2. Take the bread our from under the grill and run one side with the cut

side of the garlic.

3. Peel, deseed and finely chop the tomatoes. Combine these with onion, basil and extra virgin olive oil and season. Top 6 slices of the bread with the mixture.
